Does buckwheat contain gluten?
No. Despite the name, buckwheat is not wheat and contains no gluten: it is the seed of a plant that is not a cereal at all. The risk is downstream — buckwheat flour is often milled in the same mills as wheat, and traditional pizzoccheri are made by mixing it with wheat flour.
