Does soy sauce contain gluten?
Yes. Traditional soy sauce is made by fermenting soy and wheat together: the wheat is an ingredient of the recipe, not a contamination. The exception is tamari, which in its classic form is made from soy alone — but read the label there too, because some tamari does contain a share of wheat.
Eating out
In a Japanese or Chinese restaurant soy sauce gets into almost everything: marinades, stir fries, rice, broths. It is one of the places where "gluten free" has to be said before ordering, not after.
Recipes change from one producer to the next and from one kitchen to the next: this is how something is usually made, not what is in the plate in front of you. The only answer that holds for your plate is the ingredient list on the packet, or the person who cooked it.
