Does surimi contain gluten?

Often yes. Surimi sticks are fish paste bound with starch, and the starch used is often wheat starch. Some brands use potato or tapioca starch and are gluten free: it changes from product to product.

In seafood salads, poke bowls and cheap sushi, surimi gets in without being named.
